Apple Coleslaw


There is a cabbage in the fridge that needs to be used up soon. This is phase one, apple coleslaw.


Ingredients
1/4 white cabbage
1/2 small onion
1 red apple
1 syboe (spring or green onion)

Dressing
2 Tsp apple cider vinegar
1/2 Tsp wholegrain mustard
1/4 tsp chopped garlic
1 tsp sugar
50ml oil

Garnish
chopped parsley

Method
Finely cut the cabbage and the onion. Grate the carrot.  Slice the syboe. Keeping the skin on the apple, cut it into a fine dice. Discard the core.

Mix all of the ingredients for the dressing, then pour over the coleslaw. Mix well. Sprinkle chopped parsley over the top.
